  • Hydration & Snap: The inclusion of Xanthan Gum ensures the base doesn’t become brittle. 

Preparation for Service

1. Defrosting the base 

For a perfect bake in professional ovens, bases must be completely thawed before topping. Pull bases from the freezer 5–10 minutes before use to reach ambient temperature.

Emergency “Flash-Defrost”: If an order hits and you only have frozen stock, place the untopped base in a cool zone of the oven deck for 20 seconds or microwave for 15 seconds to break the frost before topping.

Why it matters: A frozen core acts as a heat sink, preventing the center from heating through before the protein-rich rim over-browns.

2. High-Heat Baking (350°C – 400°C)

Our bases are pre-baked for your convenience, requiring only a “flash-bake” to melt toppings and crisp the crust.

  • Cook Time: Approximately 60–90 seconds.

  • Heat Management: Place the pizza in a medium-heat zone or use a pizza screen. Do not place directly in front of the flame.

  • Rotation: Rotate the pizza every 15–20 seconds to ensure an even finish.
